El Gallo
Meet Miguel Gutierrez of El Gallo!
Specialty: Peruvian cuisine
How long have you been in business?
We’ve been in business for just under a year.
How’d you get started and what sparked the idea for your business?
There were very little options for Peruvian cuisine and I had always wanted to be in position to create my own dishes.
What do you wish you had known before you started your business?
The odds were stacked against me, and that’s alright. Even if my business had failed it would’ve been a learning experience to help me not fail in the future.
What are you most proud of about your business?
Introducing new flavors to individuals who have never had Peruvian cuisine. Having the ability to create dishes the way I want them to and seeing the end result.
What do you love most about being a food entrepreneur?
Creating dishes is the greatest satisfaction. Experimenting with food concepts is a never ending journey which helps me improve my craft.
What’s one piece of advice you have for other food entrepreneurs?
Failure is just a word. How you respond when things don’t go as planned makes the difference in your ability to move forward or not.
What makes your business unique/special?
I always try to implement new dishes as often as I can to introduce new flavors.
What’s your best seller at the moment?
Anticuchos are my staple dish.
What’s next for you and your business?
Opening a restaurant is my goal. It will allow me to experiment and implement even more dishes.
